Give leftovers a new look!
With these creative culinary ideas, no one will recognize these ingredients as
last night's meal:
If You Have Leftover Turkey or Meat, try these quick recipes:
Wrap Sandwiches: Slice leftover turkey, chicken or meat, add a little warm barbecue
sauce and canned chili peppers, and wrap them up in soft tortillas. Or spread
a wheat tortilla with leftover canned cranberry sauce and a layer of sliced
turkey or ham, and then wrap it up. Or combine sliced leftover turkey
with fajita seasoning, stir fry with onions and peppers and serve with warm
tortillas.
Turkey-Mushroom Casserole: Combine leftover chopped turkey or chicken, with condensed
cream of mushroom soup, chopped onion, canned or leftover veggies, 1 small
package of fast-cooking rice and 2 1/2 cups of liquid (water, milk and/or
broth). Bake it at 350 degrees in a casserole dish until the rice is tender
and the liquid is absorbed.
Fried Rice: Cook 2 packages of Rice-a-Roni, (any variety) Then, take a
bit of leftover pork, like from ribs or chops, or you could substitute chicken
or ham, too. Chop up the meat. Add about a tablespoon of oil to a large frying
pan, and add the cooked rice and meat. Mix (stir fry it) until heated. Then
add a couple eggs, beaten well, maybe mixed with a little water. Add to the
rice/meat and stir fry again until the egg is cooked.
Chili: My children rave over this recipe...and It is a request
at every party. The recipe originated from leftovers. Combine 2 cans
of your favorite beans (I like pink beans) Two large cans of tomato sauce (any
brand) 2 packets of chili seasoning (I use one hot and one original)
2 pounds of chop meat (fried) and one pound of leftover beef cubes.
(This is the secret ingredient that seams to be the key to it's wonderful
reputation.)
Turkey Cresent Rolls:
My kids really like these crescent rolls stuffed with leftotver turkey and
cream cheese. Combine a 3 ounce package cream cheese (softened) with 2
tablespoons margarine (melted) Mix in 2 cups cubed leftover turkey or chicken,
2 tablespoons milk, 1 tablespoon chopped onion (optional) salt and pepper.
Separate 1 8 ounce package of crescent rolls into 4 rectangles. Place about
1/2 cup of the turkey mixture onto the center of each rectangle, and bring the
corners up to the center. and press the dough perforations to seal. Pinch the
corners to seal well. Brush each roll with some melted margarine, and bake at
350 degrees for about 20 minutes, or until lightly browned.
If You Have Leftover Veggies:
Easy Quiche: Fill an empty pie shell with minced leftover vegetables, canned
seafood (crabmeat, shrimp, salmon), shredded cheese and an egg-milk mixture.
Canned evaporated skim milk works great because it's as thick as cream yet
will not spoil if left too long in the fridge.
